郭明若,男,博士,吉林大学食品科学与工程学院博士生导师、院长,美国佛蒙特大学终身教授,国家“千人计划”入选者。致力于功能性食品、天然环保产品研发与教学工作。发表学术论文百余篇,其中SCI收录近百篇,总引用次数上千次;获国际/国内授权专利10项;出版专著6部,参编13部著作教材,2007年出版美国首部《功能性食品原理与制造学》教材,2014年出版美国《人乳生物化学及婴儿配方食品加工工艺学》教材;承担中国科技部/美国农业部等科研项目57项,经费分别为1000万余元和300多万美元;主持研发多项产品并已批量生产,其中以蛋白质为主要成膜组分的木器漆产品,分别于2005年、2007年在美国和中国批量生产,在2008年被评为美国“十大绿色产品”之一;指导黑龙江完达山乳业有限公司研发的“安力聪”婴儿奶粉,2009年批量生产,销售额达5亿元人民币;共生乳饮料,共生山羊奶酸奶及山羊奶Kefir,分别于200620082010年在美国投产。郭明若博士多年来在教学学和科研之余热心培养年轻教师,为国家培养数十名食品专业人才。

课题研究

郭明若教授多年来致力于功能性食品、益生菌、食品蛋白的功能特性等方面的研究,居于国际领先地位。研究领域涵盖功能性乳制品研制及机理研究;共生乳制品开发及其益生菌研发;初乳低分子量活性多组份提取及应用;乳清蛋白质为主要成分的微胶囊技术研发;婴儿奶粉营养组份互相作用机理;超声技术应用于乳的杀菌处理;乳蛋白为基料的环保材料的研究与探索。多项专利已转让并实现产业化,其产品上市并获得显著的经济和社会效益,其中绿色环保型纳米材料被评为美国2008年“十大绿色产品”之一,与黑龙江完达山乳业合作开发的“安力聪”婴幼儿配方奶粉销售总额达5亿元人民币。以乳蛋白为主要原料研发的用于木制品的环保粘合剂已申请美国专利;“利用乳清蛋白质和水基树脂生产环保木器漆及涂料”专利技术已经转让到天津绿屋涂料有限公司和美国佛蒙特天然涂料有限公司,创产值数亿元。另外,共生乳饮料等5种产品亦在美国批量生产。在功能性食品、益生菌、益生和共生乳饮料、酸奶、发酵燕麦酸奶、燕麦酸奶冰激凌、共生山羊和水牛乳制品、食品超声杀菌、婴儿配方奶粉化学与组分互作,微量元素(铁和锌)的生物利用、功能性营养成分(叶酸、生物素和B12)的分析、孕妇营养食品、食品乳蛋白的功能特性等研究居于国际领先地位。

 

社会兼职

任美国佛蒙特州乳业顾问,美国百氏可乐、惠氏公司、兰多湖等二十余家公司咨询专家;美国食品工艺学学会、美国乳品科学学会、美国化学学会、美国营养学会会员;International Journal of Biotechnology Research and PracticeJournal of Functional Foods in Health and Disease以及Journal of Cancer Integrative Medicine等国际杂志的编委;Journal of Dairy ResearchJournal of Dairy Science, International Dairy Journal, Journal of Food ScienceJournal of Applied Microbiology, Food Chemistry, International Journal of Dairy Science and Technology等十余家国际知名期刊的特约编委;先后担任东北农业大学、东北林业大学和内蒙古农业大学的客座教授;曾担任教育部内蒙古农业大学“乳品生物技术与工程”重点实验室首席科学家,内蒙古自治区乳业首席科学家;担任三元食品、完达山乳业等多家国内食品企业的技术顾问。
