Guan Shuang is a Professor in the Department of Food Science and Engneering at Jilin University in Jilin Province, China. Guan received his Ph.D. in Veterinary Pharmacology from Jilin University, and also holds a M.D. in Food Science. Dr. Guan research program is focused on toxicity mechanism of food contamination, the effects of functional foods/nutraceuticals/bioactive compounds in natural products and herbal on lipid metabolism. In recent years, he has presided over or participated in a number of provincial and ministerial scientific research projects and enterprise projects.Up to now, more than 35 peer-reviewed research papers have been published in academic journals as the first author or corresponding author.
